 It’s time for Oktoberfest and you need a side dish to go along with all those bratwursts and beers. Look no further! Tangy, herby, and a little smoky. WINNING.

Oktoberfest Feast: A Side Dish For All The Meats

To continue off of our Oktoberfest theme, we are making some vinegary, delicious German-style potato salad. So, being an American, I had to bend the rules a bit and add my own style to this dish. Rather than simply boiling the potatoes to completion, I decided to par-boil them and finish on the grill. Get those spuds a little smoky, as well as nice and charred on the outside.

One thing that I was told, is that I maybe should have included some stone ground mustard in the recipe. Personally, I think the recipe is perfectly fine as is. But, I may try adding it next time and see if it made a great difference. If so, I will report back to you guys and edit the recipe. For now, however, this recipe gives me everything I need to feel happy. Bacon, vinegar, herbs, and a touch of maple syrup. It is an absolute treat!

What Will I Need To Make German-Style Potato Salad?

  • 3 pounds of Yukon Gold potatoes
  • Apple Cider Vinegar
  • Sea Salt. I use Redmond Real Salt. Find it HERE.
  • Coarse black pepper
  • Bacon
  • Pickled red onions. Recipe HERE. Or, if you are lame, regular red onions.
  • Chicken broth
  • Maple syrup
  • Dry dill
  • Celery
  • Fresh parsley
  • 4 green onions
  • Fire pit/grill/cast iron grill pan/flame thrower…..something to char those potatoes. Or, again, if you are totally lame, skip the charring and have REGULAR potato salad. But, let’s don’t settle for a life of mediocrity…..let’s aspire to reach greater heights.

What Should I Pair This Potato Salad With?

  • Brathendl- a Bavarian-style roasted chicken. These two dishes are from the same region of Germany, where Oktoberfest originated. So, they are a natural pairing. Check out our recipe HERE.

Grilled German-Style Potato Salad

Vinegary, herbal, and a little smoky! Our version of German potato salad will be a great addition to your next cookout

Ingredients
  

  • 3 Pounds Yukon Gold Potatos
  • 1/2 Cup Apple Cider Vinegar
  • 1 ½ Tsp Sea Salt
  • 1 Tsp Coarse Black Pepper
  • 8 Slices Bacon, chopped into ¼" pieces
  • ½ Cup Pickled Red Onions OR raw red onions
  • ½ Cup Chicken Broth
  • 1 Tbsp Maple Syrup
  • 1 ½ Tsp Dry dill
  • 3 Each Celery Stalks and Leaves
  • 2 Tbsp Fresh Parsley, chopped
  • 4 Each Green Onions

Instructions
 

Place the potatoes into a large pot. Pour cold water over the potatoes, fully submerging them, and covering them by about 1-2 inches.

    Turn heat to high and bring to a boil. Once the water starts boiling, start a timer for 10 minutes. We want to only partially cook the potatoes in the water.

      Once the potato timer goes off, remove from heat and pull the potatoes out of the water.

        Preheat your grill on high heat or build a nice hot campfire.

          Finish cooking your potatoes on the grill and get a nice, dark, charred exterior.

            Once the potatoes look charred and are fully cooked, remove from heat and allow to cool.

              Slice the bacon into small pieces and cook in a skillet until fully cooked and crispy.

                Remove bacon from pan, leaving all of the fat and drippings in skillet.

                  To the skillet add salt, black pepper, chicken broth, dill, and maple syrup. Mix with bacon fat.

                    Now, chop your potatoes into bite-sized pieces, about ½-¾ inch cubes.

                      Place the potatoes into an appropriately sized mixing bowl and mix with the apple cider vinegar.

                        Chop the red onion, celery, green onions, parsley, and any celery leaves that you could gather. Add these to the bowl with the potatoes.

                          Pour the dressing from the skillet all over the potatoes in the mixing bowl.

                            Add the reserved bacon to the mixture and stir gently to combine everything.

                              Can be served cold or at room temperature.
